Mango chicken from packed cookbook at our Old School Kitchen kids cooking class last night. So yum. With some rice and we made some green fritters to go with it-zucchini, silver beet, spring onion and coriander. Fritters are a good way to add in extra veg and go so well with lots of different meals even eggs for breakie. I also got to show them how to debone the chickens as this can be a more economical way to buy our chicken meat and we’ve got a bone for the stock. And we need a good stock for lots of our cooking including this curry. www.eloiseemmett.com

Most of my work hours lately have been spent getting @teralinabeachhouse ready for short stay accommodation. Preparing the actual house with new gear, cleaning gardens, painting etc and the marketing I have created a new simple website set up with a calendar for direct bookings and a channel manager to manage the wholesale booking from the booking sites like air bnb and booking .com and the 400 other wholesale channels I may choose to wholesale my accommodation through. We were fortunate and picked up a few big bookings and are now fully booked to near the end of April. I think a small group private Cooking Retreat would work great in this house? Beautiful Honey soy baked Tassal Salmon and noodle salad cooked at our Kids Cooking Classes Monday. I have posted more photos on my website. This recipe from my book Seafood Everyday was a good recipe for the kids to practise knife skills, they made their own salad dressing and marinade and learnt how easy it is to bake fish. Salmon is a forgiving fish when learning to cook, it has a high oil content so is still delicious over cooked . It can be served form rare to well done really so you can not really muck it up. @tassalsalmon @inside_tassal @tasseafood @salmontasmania

A very Autumny dish I cooked last week. We had an amazing roast Venison leg and then the leftover meat into this Shepards (or should be called shooters??) Pie. I made a cheesy cauliflower polenta for the top. Served with freshly made some Green Tomato chutney that will be served on everything for awhile.
