Our Chef Eloise Emmett  teaches and affordable cooking workshops and publishing, photography and styling workshops from our Event House.  Eloise is a trade qualified chef with over 20 years experience in commercial kitchens and loves sharing her professional skills and passion for wholesome, local, seasonal food. Past attendees say they would come back just for the lunch served!!

Tasman Peninsula Seasonal cooking Experience

Join me to cook the best of the seasons produce from the Tasman Peninsula. Using a variety of cooking techniques to learn new skills for the home kitchen we will cook a seasonal lunch. The Tasman peninsula produces Quail, wallaby, venison, rabbit, beef, lamb, goat, rabbit, salmon, oysters, mussels, crayfish, abalone, parrot fish, trevally, trevalla, octopus, chicken, goats, cheese, olive oil,  milk and pretty much every fruit and veggie you can think of! I will collect what I can from my own garden and what my husband Brendan, a commercial fisherman, has caught and collect all the other ingredients locally.

Event and party planning

I love planning a party, I think I get more enjoyment form my children parties then they do! I have 25 years of hospitality and catering experience at this workshop I will show you how to plan a fun and stress-free event or party. We will discuss:

*menu creation, when to shop, what to prep and how to serve
*how much food to prepare for different events and how to calculate what you need to buy and prepare so you have enough without wastage
*drinks to provide
*invitations and when to send invitations
*menu creation and how to serve
*table setting
*I will teach you how cook a stress free delicious seasonal and local 3 course “dinner party style” lunch

Bread Baking

Join me to bake some delicious bread!
We will discuss all types of bread baking in a domestic situation and how to bake the best breads you can for your family. we will make:
beautiful baguettes to accompany a meal.
Loaves
Fruit bread
scrolls, easy to bake and freeze for the easiest packed lunches.
Home-made Pizza
We will discuss sour dough baking and how I bake it at home.  I will have some sourdough on the go at the different stages, but sourdough can not be made in this 2 hour class.

Seafood Cooking

Join me  to learn about cooking seafood. We will Prepare and cook beautiful Tasmanian Seafood such as mussels, oysters, octopus and fish into delicious dishes for weeknight meals and special occasions, and discuss all sorts of ways to cook seafood. We will prepare hand made pasta and prepare one of my most popular dishes from The Mussel Boys restaurant days and now popular in Seafood Everyday and popular in home kitchens: Mussels with fettuccine, capers, cream and prosciutto. You are welcome to stay for lunch after the class. Limited spots small groups maximum 8

Game cooking

I will teach you how to prepare and cook games meats, depending on what is freshest and best sourced locally at the time, such as Quail, Wallaby, Rabbit, Venison and goat and discuss all ways to cook Game meats in weekday meals and special occasion dinners.

Phone photography and food styling

This workshop is suitable for the BUSY food business manager, chef or employee from a cafe, bar, pub, restaurant, hotel, food manufacturing or foodies and fitness food bloggers, who want to make big improvements on their food photos for social media, RIGHT NOW.  Suitable for those who want to improve their social media content on the go, but are not quite ready, or not quite sure if they need to, take that big leap up into purchasing all the expensive camera and editing gear and then commit the time to actually learn how to use it all correctly. This workshop will cover:
*sourcing props and background
*lighting
*food styling
*prop styling
*editing on your phone
*photography with your phone- bring your DSLR along too if you have one, I am sure you will still learn plenty here!!

I will cook a feast of local seasonal food to photograph (and eat and enjoy) and there will be plenty of time to practise!

Ellie Emmett organise, hosted and catered for a food styling and photography workshop I attended a few years ago, and did an outstanding job,

Being a highly experienced chef with many years of experience under her belt, she is also a passionate exponent of the paddock to plate lifestyle which is made simple and is so logical when you consider that she lives on the Tasman Peninsula where she makes full use of some of Tasmania’s top produce which is grown there and she has a fisherman for a husband who provides her with the freshest of ingredients direct from the sea.

We had a vegan amongst our group, which was not a problem at all for Ellie. The tomato roasted with thyme, white bean and polenta tart we lunched on was stunning, as was the freshly baked bread (for mopping up those delicious juices), the perfectly cooked octopus, Greek style salad and roast baby carrot and pumpkin salad

It’s a cliché to say it, but I’d do a similar course just for the food… if Ellie was cooking!”
